KIWI FRUIT MARMALADE 
1 lime
1/2 c. water
3 c. (about 24 oz.) kiwi fruit, pared and chopped
1 tbsp. lime juice
1 pkg. (2 oz.) powdered pectin
1 c. light corn syrup
3 c. sugar

Microwave method: Remove peel from lime with a vegetable peeler and cut into very thin strips. Combine peel and water in small microwave and container and cook on high for 2 minutes.

In large microwave mixing bowl blend kiwi fruit, lime peel mixture and juice. Stir in pectin until thoroughly blended. Set aside for 30 minutes. Stir in corn syrup and microwave cook for 2 minutes at high; stir after 1 minute.

Gradually stir in sugar until completely dissolved. Pour into freezer containers. Allow to stand room temperature overnight. Store in freezer or use in 3 weeks. Makes 5 cups.

Since microwave ovens vary in power, you may need to adjust your cooking time.
