AU GRATIN VEGETABLES 
1 lb. (total) fresh cauliflower, broccoli and/or brussel sprouts
1/3 c. chopped onion
3 tbsp. butter
2 tbsp. flour
1/2 c. shredded sharp cheddar cheese
Salt & pepper
1/4 c. grated Parmesan cheese
Paprika

Cut cauliflower and broccoli into flowerets, halve large brussel sprouts. Cook vegetables in small amount of salted water until crisp and tender. Drain. Reserve cooking liquid, adding enough water to make 1 cup. Keep veggies warm.

In small saucepan cook onion in the butter until just tender. Stir in flour, add reserved cooking liquid. Cook until thickened. Stir in cheese, cook until cheese melts. Season with salt and pepper. Gently mix cheese sauce with vegetables. Pour into baking dish. Sprinkle with Parmesan cheese and paprika. Broil until top is lightly browned. Serve. Makes 4 to 6 servings.
