SOUTHERN OATMEAL COOKIES 
1 c. Wesson oil
1 c. brown sugar
1 c. white granulated sugar
2 well beaten eggs
1 tsp. vanilla
1 1/2 c. sifted flour
1 tsp. salt
1 tsp. baking soda
3 c. quick cooking oats
1/2 c. chopped walnuts or pecans

Thoroughly cream shortening (Wesson oil) and sugars. Add eggs and vanilla; beat well. Sift dry ingredients; add to creamed mixture. Add oats and nuts; mix well. Chill and slice from rolls or drop by teaspoon on ungreased cookie sheet. Bake at 350 degrees for 10-12 minutes. Makes 4-5 dozen.

This is such a delicious, easy recipe. I added one full cup of pecans to a batch, and to another I added a half cup of Craisins. Both were a hit! Definitely a keeper!
