SKILLET CHICKEN & RICE 
2 1/2 - 3 lbs. chicken, cut up
1/4 c. vegetable oil
1 tsp. salt
1/2 c. hickory smoked barbeque sauce
1/4 c. water
1 med. onion, sliced
1 green pepper, cut in 1" squares
1 (3 oz.) can mushrooms, drained
Rice

Brown chicken in oil, season and add barbeque sauce, water and onion. Cover and simmer for 30 minutes. Add green pepper and mushrooms and continue cooking for 15 minutes more. Remove chicken and add hot cooked rice to sauce.
