APRICOT BARS 
1 c. brown sugar
3/4 stick butter
1 3/4 c. all-purpose flour
1 1/2 c. quick-cooking oats
1/2 tsp. baking soda
1 jar apricot preserves (about 1 c.)

Mix brown sugar and butter. Stir in flour, oats and baking soda until crumbly. Press half of crumbly mixture in 13 x 9 inch pan. Spread apricot preserves over mixture. Top with remaining mixture, pressing lightly. Bake 25 minutes or until brown. Cut into bars while still warm.
