ZUCCHINI BREAD 
2 c. sugar
1 c. oil
4 eggs
2 tsp. vanilla
2 tsp. cinnamon
3 c. zucchini
2 c. self-rising flour
1 c. pecans

With wooden spoon, beat sugar and oil. Add eggs and vanilla; mix. Add dry ingredients alternating with zucchini. Bake in 2 greased and floured loaf pans. Dates and nuts may be added.
