KENTUCKY RELISH 
1 med. cabbage
6 lg. red mangos
6 lg. green mangos
A hand full of coarse salt
3 c. sugar
2 tbsp. pickling spice
12 med. onions
15 med. green tomatoes
6 or 8 banana peppers
1 qt. vinegar
1 c. water

Coarsely chop cabbage, mangos, onions, tomatoes and peppers. Mix with salt and let stand overnight. Drain thoroughly. Put in large kettle and add vinegar, water, sugar and spices (tied in bag). Bring to boil and cook for 15 minutes. Remove spice bag. Can and seal.
