CHEESE CAKE 
CRUST:

Combine 1 cup graham cracker crumbs, 3 tablespoons sugar and 3 tablespoons butter. Press into bottom of 9 inch springform pan. Bake at 325 degrees for 10 minutes. Remove and increase temperature to 450 degrees.

CAKE:

3 eggs
1 tsp. vanilla
3 (8 oz.) cream cheese
Choice of topping

Combine softened cream cheese and sugar until well blended. Add eggs, one at a time, mixing well after each addition. Blend in vanilla. Pour over crust. Bake at 450 degrees for 10 minutes. Reduce to 250 degrees for 25-30 minutes. Cool before removing rim of pan. Chill. Before serving, top with preserves or fruit pie filling.

Hint: Do not overbake - this will cause the cheese cake to be very dry and crumbly. If not using springform, crust burns easily.
