BROCCOLI CASSEROLE 
2 bunches of fresh broccoli
1 1/2 stick butter
1 pkg. out of a box of Ritz crackers
1 (8 oz.) pkg. Velveeta cheese

Broccoli may be chopped up or cut in stems. Cook broccoli and drain well. In large pan combine 1 stick butter and 8 ounces Velveeta cheese (slices). Mix well over medium heat, stirring constantly, until creamy. Place broccoli in baking pan evenly and sprinkle with salt and pepper. When cheese is mixed in creamy, pour over broccoli evenly if possible.

In small saucepan melt 1/2 stick butter and combine crushed Ritz crackers until butter is soaked up. Spread over broccoli and cheese sauce. Cover and bake at 325 degrees for 1/2 hour. Even if you hate broccoli, you'll love this.
