LEMON CHICKEN 
2 tbsp. grated lemon peel
1/2 c. fresh lemon juice
2 cloves garlic, crushed
2 tsp. dried thyme
1 shallot, finely chopped
2 1/2 to 3 lb. chicken

Combine lemon peel, lemon juice, garlic, thyme, shallot in a mixing bowl. Cover chicken with lemon marinade and marinate in refrigerator. Place chicken in single layer in a 2 quart baking dish. Bake uncovered in 425 degree oven for 25 minutes. Brush with marinade and lower heat to 325 degrees. Bake for an additional 30-35 minutes.
