CRACKER BARREL POTATO CASSEROLE 
1 bag hash browns
8 oz. Colby cheese, grated
2 c. cream of chicken soup
1 1/2 sticks butter
onions

Melt butter; add soup and desired amount diced onion and pepper. Stir in grated cheese and add to potatoes. Put this mixture into a greased glass 9 x 13 baking dish.

Bake at 350°F for 30 to 40 minutes.
