SQUASH CRACKER CASSEROLE 
2 lbs. yellow squash
2 onions, chopped or grated
1 c. mayonnaise
2 eggs, beaten
12 saltine crackers, crushed
1 pkg. HIDDEN VALLEY® Buttermilk Dressing Mix
1/2 tsp. salt
1 c. bread crumbs mixed with 1/2 stick butter
1 c. grated sharp cheese

Cook squash and onions until tender. Drain. Add all other ingredients except bread crumbs and butter. Pour into medium casserole. Top with bread crumbs mixed with melted butter. Bake at 325 degrees for 30 minutes.
