SOUTHERN FRIED CHICKEN 
1 fryer
1 c. flour
2 tsp. salt
1/4 tsp. pepper
1/2 tsp. celery salt
1/2 tsp. monosodium glutamate
1 tsp. paprika
1/3 c. butter
1/2 onion, sliced
1 c. boiling water

Cut up chicken. Wash, dry well, and flour pieces by shaking several at a time in paper bag container flour, salt, pepper, celery salt, monosodium glutamate and paprika. Melt butter in roaster. Brown floured chicken at 450 degrees for about 20 minutes. When browned on both sides, add sliced onion and boiling water. Cover roaster, lower heat to 350 degrees and cook until fork-tender, basting occasionally. May be prepared in an electric fry pan at 375 degrees setting for browning. Reduce heat to 212 degrees and onion, 1/2 cup water and cover. Remove lid last 20 minute of cooking time to crisp chicken.
