HOT CHICKEN SALAD 
3 1/2 c. chopped cooked chicken
3 c. diced celery
3 tbsp. lemon juice
2 c. water chestnuts
2 sm. can mushrooms, drained
6 hard boiled eggs, diced
2 1/2 c. cooked rice
1 1/2 c. mayonnaise
3 cans cream of mushroom soup, undiluted
2 tbsp. grated onion
Toasted almonds
Crushed Ritz crackers
Paprika

Mix all together except almonds and Ritz crackers and paprika and place in casserole. Top with toasted almonds and Ritz crackers and sprinkle with paprika. Bake at 350 degrees for 30 minutes.
