CREAMY RICE PUDDING 
1 c. rice (not Minute or UNCLE BEN'S®)
1 qt. homogenized milk
2 c. water
Grated rind of 1 lemon
1/2 stick cinnamon
1/2 c. sugar
2 eggs, beaten
1 tsp. vanilla
Cinnamon

Combine rice, milk, water, lemon rind and cinnamon stick in large saucepan, bring to a boil, stirring often. Simmer 45 minutes to 1 hour, stirring often until rice is mushy and forms a custard. Add sugar and cook 5 more minutes. Whisk some of the rice mixture into eggs and stir back into remaining rice mixture which has been removed from heat. Stir in vanilla. Pour into a 3 quart baking dish or casserole and sprinkle with cinnamon. Cool. Refrigerate. Serves 6.
