EGG SALAD 
6 hard boiled eggs, diced
1/2 tsp. salt
1 tsp. black pepper
1 stalk chopped celery
1/2 c. onion, chopped finely
3 tbsp. relish
2 tbsp. mustard
Mayonnaise to taste
2 tbsp. paprika for color

Mix ingredients thoroughly. Place on platter and garnish with paprika. Serve on a bed of lettuce. 4 servings.
