SEVEN LAYER SALAD | |
1/2 head lettuce, broken in pieces 2 green peppers, chopped 3-4 celery stalks, sliced thin 1/2 red onion, chopped 1 pkg. frozen peas, cooked and drained (don't over cook) Dressing mixture 8-10 bacon strips, cooked crisp and broken in pieces 8 oz. cheddar cheese, shredded DRESSING MIXTURE: 1 c. mayonnaise (light mayonnaise or Miracle Whip not as good) 1 c. sour cream 1 tbsp. sugar Salt and pepper to taste Start salad with a layer of lettuce. Add the remaining ingredients in the order given. Top the peas layer evenly with the dressing mixture, and then add the bacon and cover evenly with the cheese. At this point, I usually press it down gently to compact things, so it stays together better when served. Garnish with either 1/2 cherry tomatoes or 1/2 black pitted olives every 1 1/2 inch or so. Refrigerate for 12-24 hours before serving for best flavor. |
