CABBAGE TAMALES | |
1 1/2 lb. hamburger 1 med. onion, chopped 2 1/2 c. tomatoes or 1 lg. can Salt Mix all ingredients together. Core a large head of cabbage and place in a large pan of boiling salt water. Let stand until leaves wilt some, not too much just so you can roll them easy. Place mixed ingredients in leaves and roll pen with toothpicks like a tamale. Place on platter until finished. Chop the rest of the cabbage up and place on bottom of a large pan. Then lay tamales on top of the chopped cabbage. Add 1 tablespoon bacon drippings or strip of bacon on top of tamales. Add enough water to cover, about 1/2. Cook for 1-1 1/2, this makes 15-20 tamales. |
