MEXICAN DELIGHT 
1 lb. ground beef - chuck
1 onion
2 cans pinto beans - 8 oz. jalapeno makes it better
1 can enchilada sauce
1 can Ro-Tel
1 can cream of mushroom soup
1 can Cheddar cheese soup

Brown beef and onion together. Drain. Add other ingredients. Cook in large container simmering 2 hours. When ready to serve, add 1 bag (about 1/2 pound of enchilada Fritos).
