CHINESE CHICKEN SALAD 
2 chicken breasts
1 head lettuce, shredded
1 c. celery thinly sliced
1 sm. cucumber, thinly sliced and seeded
3 tbsp. toasted sesame seeds
3 tbsp. toasted almonds slivered

Steam chicken 20 minutes and then cool and shred. Mix 2 tbsp. dressing with chicken and set aside. Just before serving, toss vegetables, chicken, sesame seeds and almonds. Serve over chow mein noodles.

DRESSING:

6 tsp. sugar
7 tbsp. rice vinegar
2 tsp. salt
1/4 tsp. white pepper
1 tsp. lemon juice
1/4 c. oil

Mix dressing ingredients in jar and set aside.
