CHINESE CHICKEN SALAD 
5 c. diced, cooked chicken
4 oz. clear Italian dressing
1 c. mayonnaise
1 tbsp. soy sauce
Juice of half lemon
16 oz. sliced water chestnuts
20 oz. pineapple tidbits, drained
22 oz. mandarin oranges, drained
1 c. chopped celery
1 c. slivered almonds

Marinate overnight in refrigerator: chicken and Italian dressing. Mix together: mayonnaise, soy sauce, juice of 1/2 lemon. To drained chicken add the other ingredients. Mix together. Stir in mayonnaise mixture. Serves 8.
