EGGPLANT ITALIAN STYLE 
1 med. eggplant
6 tbsp. butter
2/3 c. fine dry bread crumbs

Wash eggplant; pare and cut crosswise into 1/2 inch slices.

Melt butter in small saucepan. Measure dry bread crumbs onto waxed paper.

Dip each eggplant slice in melted butter, then in crumbs and place on well greased baking sheet. Sprinkle with salt and bake in hot oven (450 degree) about 20 minutes or until lightly browned and tender.

Remove from oven and sprinkle with grated Parmesan cheese. Serve immediately.
