AUNT LU'S CRUMBLE TOP COFFEE
CAKE
 
4 c. flour
2 c. sugar
1 c. butter
1 tsp. cinnamon
1 tsp. allspice
1 tsp. ginger
1 tsp. baking soda
2 eggs
1 c. buttermilk (may use milk with a little vinegar in it)

In a large mixing bowl combine flour and sugar. Cut in with a hand pastry blender, butter, until the mixture is the size of small peas. Set aside two cups of this mixture. Combine ginger, cinnamon, allspice and soda. Blend this into the remaining flour mixture. Add eggs and buttermilk, mix just until blended. Pat 1 cup of reserved crumb mixture in the bottom of a 13"x9"x2" butter pan. Spread batter evenly over the crumbs in the pan. Sprinkle on the remaining 1 cup of crumbs. Bake at 350 degrees for 30 to 35 minutes.
