RICE PUDDING 
1 c. cooked rice
1 c. cream
2 c. milk
2 egg yolks
1 egg
3 tbsp. cornstarch
1/4 c. sugar
Salt

Scald milk. Mix dry ingredients together. Add to beaten eggs. Add some of the hot milk to egg mixture. Combine eggs with milk. Cook until it thickens, add rice, vanilla, and mix well. Pour into pudding pan and add 2 egg whites beaten and sweetened on top of pudding. Brown in oven.
