RICE - TUNA MOLD 
3 c. cooked cold rice (minute)
1 1/2 c. finely chopped celery
7 oz. tuna, drained & flaked
1 pkg. frozen shrimp, chopped
1/2 c. chopped pickles
2 tbsp. chopped parsley
1/2 c. mayonnaise
1/2 c. sour cream
2 tbsp. lemon juice
1/2 c. diced pimento
Salt & pepper

Combine first 5 ingredients in 1 bowl. Combine remaining ingredients in another bowl. Then combine together. Pack into a 1 quart mold (a Jello mold would be nice) grease with mayonnaise. Chill 1 hour; unmold and garnish with parsley, carrots and/or olives. Serve with crackers.
