PUMPKIN ROLL 
3 eggs
3/4 c. sugar
2/3 c. pumpkin
3/4 c. flour
1 tsp. baking soda
2 tsp. cinnamon

Beat eggs and sugar 5 minutes. Stir in remaining ingredients. Pour into well greased jelly roll pan and sprinkle with chopped nuts. Bake at 375 degrees for 15 to 20 minutes. Take from oven and put on powdered sugar wax paper and roll like jelly roll (with paper on) and let stand 30 minutes. Unroll and fill with filling and reroll. (I do not use waxed paper, I use a linen towel.)

FILLING:

1 c. powdered sugar
1 (8 oz.) pkg. cream cheese
1 tbsp. butter
1 tsp. vanilla
1/4 c. lemon juice

This recipe freezes well.
