BLUEBERRY RICOTTA SQUARES 
1 c. flour
3/4 c. sugar
1 1/4 tsp. baking powder
1/4 tsp. salt
1/3 c. milk
1/4 c. Crisco
1 egg
1/2 tsp. vanilla
1 1/2 c. fresh blueberries
2 eggs, beaten with fork
1 1/4 c. Ricotta cheese
1/3 c. sugar
1/2 tsp. vanilla

Mix together in bowl the flour, sugar and baking powder and salt. Add milk, Crisco, egg and vanilla. Beat for 2 minutes at medium speed of electric mixer. Pour into 8 inch square pan.

Sprinkle the blueberries evenly over the batter. Mix thoroughly the 2 eggs, Ricotta cheese, 1/3 cup sugar and 1/2 teaspoon vanilla; spoon evenly over the berries.

Bake in 350 degree oven for 55 to 60 minutes. Cool and cut in squares.
