FRIED RICE 
6 bacon slices
3 beaten eggs
1/2 c. oil
2 cloves garlic, chopped
1/2 tsp. grated ginger
Soy sauce to taste (3 tbsp.)
3/4 c. cashews
3 green onions, chopped
4 c. cooked rice, chilled
1 c. celery, sliced
Optional Peas, shrimp, chicken cubes

Fry bacon (remove and crumble); add 3 beaten eggs. Fry like omelet (remove and cut into pieces). Add oil to cover bottom of pan. Cook garlic, ginger and onion; add chilled cooked rice. Stir fry about 5 minutes. Add bacon, egg, celery and any other options. Add soy sauce to taste. Stir fry until hot. Let set to make it more flavorful. Reheat and add cashews.
