SPINACH BALLS 
2 (10 oz.) pkg. frozen spinach, thawed & squeezed fairly dry
2 c. crumb herb stuffing
1 c. firmly packed Parmesan cheese
1/2 c. butter, melted
4 sm. green onions, chopped fine
3 eggs
Dash nutmeg

Mix all ingredients together. Shape into walnut size balls. Bake at 350 degrees for 10-15 minutes. These freeze well. Dip in honey mustard sauce.

SAUCE:

1 c. mayonnaise
1 tsp. mustard (or to taste)
Honey (to sweeten)
