BETTY'S ZESTY CORN STUFFING
BALLS
 
1/2 c. onion, chopped
1/2 c. celery, chopped
4 tbsp. butter
1 can cream style corn
1/2 c. water
1 tsp. poultry seasoning
1/2 tsp. pepper
1 (8 oz.) pkg. herb seasoned stuffing mix
3 eggs, slightly beaten
1/2 c. butter

In saucepan, cook onion and celery in 4 tablespoons butter until tender, but not brown. Add corn, water, poultry seasoning and pepper. Bring to boil, pour over stuffing mix and toss together lightly. Stir in eggs and shape into 7 or 8 balls. Place in 9 x 9 baking pan. Pour 1/2 cup melted butter over top. Bake at 350 degrees for 25 minutes. Can be made ahead of time and refrigerated before you bake them.
