MARINATED VEGETABLE SALAD | |
3/4 c. white vinegar 1/2 c. oil 1 c. sugar 1 tsp. salt 1 tsp. pepper 1 tbsp. water 1 (16 oz.) can peas 1 (16 oz.) can whole kernel corn 1 (16 oz.) can green beans 1 c. green peppers, chopped 1 c. onions, chopped 1 (4 oz.) jar pimentos In saucepan bring to boil vinegar, oil, sugar, salt, pepper and water. Remove from heat and cool. Drain peas, corn and beans. Add to peppers, onions and pimento; mix well. Pour cooled mixture over vegetables and stir. Marinate at least 4 hours but preferably overnight. Drain and serve. |
