MANDARIN ORANGE SALAD 
1 can (10 1/2 oz.) mandarin oranges, drained
2 c. raw cauliflowerets
1/4 c. chopped green pepper
2 c. bite-size pieces fresh spinach (about 2 oz.)
1/4 c. Orange Blossom Dressing (recipe follows)

Toss all ingredients. Makes 6 servings. Approximately 36 calories per serving.

ORANGE BLOSSOM DRESSING:

1 can (14 oz.) evaporated skim milk
1 can (6 oz.) frozen orange juice concentrate, thawed

Mix milk and orange juice concentrate until well blended. Makes 2 1/2 cups. Approximately 20 calories per tablespoon.
