SAUSAGE GRAVY 
1 lb. sausage (med. or reg.)
Salt & pepper to taste
4 tbsp. leaf sage
1 c. cold water
1 tbsp. flour

Chop sausage into little chunks. Brown sausage lightly over medium heat. (We prefer Jimmy Dean's.) Drain sausage on paper except a tablespoon left in pan. Return sausage to pan, add salt and pepper, sage and 1 tablespoon of flour. Stir well and then add water, bring to boil, stirring constantly. You may have to add more water depending on consistency. Don't cook too long. Great on buckwheat pancakes or biscuits. Serve with applesauce or scalloped apples.
