SWEET POTATO SOUFFLE 
3 c. cooked sweet potatoes
1/2 c. sugar
1/2 tsp. salt
2 eggs, beaten
1/2 stick butter, melted
1/2 c. milk
1/2 tsp. vanilla

Topping:

1/3 c. flour
1 c. nuts
1/3 stick butter, melted
1 c. brown sugar

Combine sweet potatoes, sugar, salt, eggs, milk, butter and vanilla. Pour into buttered casserole. Cover with topping mixture. Cover with foil and bake at 350°F for 30 to 35 minutes. Uncover for the last 10 minutes to allow topping to brown.
