EASY COCONUT ICING 
2 c. granulated sugar
2 (9 oz.) pkgs. frozen coconut (thaw slightly before using)
2 (8 oz.) cartons sour cream

Mix and refrigerate overnight. Bake any yellow or white cake (from scratch or a mix) in 2 layers. Cut layers in half to make 4 thin layers. Spread with icing and refrigerate until served.
