RHUBARB MUFFINS 
1 c. brown sugar
1/2 c. oil
1 egg
2 tsp. vanilla
1 c. buttermilk
1 1/2 c. diced rhubarb
2 1/2 c. sifted flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
Chopped nuts

Blend together first 6 ingredients and beat. Sift together dry ingredients and fold into first mixture. Add nuts. Put batter into about 20 or 21 cupcake papers and top with the following crumbly mixture: 2 tbsp. sugar 1 tsp. cinnamon

Combine and sprinkle a little on each muffin. Bake at 400 degrees for 15 minutes.
