SWEET POTATOES AND APPLES 
4 med. sized sweet potatoes
3/4 c. light brown sugar
1/2 tsp. cinnamon
1/2 c. water
4 med. sized apples
1/2 tsp. salt
2 tbsp. butter

Parboil the sweet potatoes until tender. Cool and skin. Cut the sweet potatoes into thick slices. Peel and core the apples and slice into half inch rings. Arrange in alternate layers in a greased baking dish, topping with apple rings.

Mix the brown sugar, salt and cinnamon. Sprinkle part of the sugar mixture over each layer. Dot with butter. Add water and bake covered in a moderately hot oven (375 degrees) for about 35 minutes. Remove the cover and cook until the apples are tender and the top is browned - about 15 minutes. Serves 6.
