GERMAN POTATO SALAD 
5 lb. red potatoes
1 c. red onion, chopped
1 c. celery, chopped
1 tsp. black pepper
1 tsp. garlic salt
6 tbsp. green relish
3 c. mayonnaise
1 c. carrots, chopped
1 oz. parsley flakes
12 eggs, boiled
1 tbsp. vinegar
1/4 c. white wine

Cook 5 pounds of red potatoes and after cooked drain and put into refrigerator to cool. Bring out when cold and peel them, also peel eggs and add celery, onions, carrots, and spices in large mixing bowl. Add mayonnaise and mix together. Add vinegar and white wine stir well and press into mold. Place lettuce on large plate and turn mold out on top of lettuce. Serve with crackers or bread sticks.
