MICROWAVE CHILI | |
2 tsp. oil 1 chopped onion 2 cloves garlic, minced 1 (14 oz.) can tomatoes 1 (12 oz.) bottle of beer 1 tbsp. chili powder 1 tsp. ground cumin 1 tsp. hot sauce or to taste 1 (15 oz.) can pinto beans, rinsed & drained 1 (15 oz.) can kidney beans, rinsed & drained 1 green bell pepper, coarsely chopped 1/4 c. chopped bell pepper, coarsely chopped 1/4 c. chopped cilantro (optional) Mix oil, onion and mince garlic together in a large bowl. Microwave on High for 3 minutes. Stir in tomatoes, beer, chili powder, ground cumin and hot sauce. Cover and cook on high until it boils, about 5 or 6 minutes. Stir, reduce power to medium and cook 12 minutes, stirring constantly or occasionally. Gradually add remaining ingredients as it cooks. |
