ZESTY TATER TOT CASSEROLE 
1 (2 lb.) bag frozen tater tots
2 lb. ground chuck or beef
1/2 onion (optional)
1 (10 oz.) can hot Rotel
8 oz. (1/4 block) Velveeta cheese
1 (8 oz.) pkg. shredded mild cheddar cheese
garlic salt or powder

Preheat oven to 350°F.

Deep fry tater tots (I have found this to be best, as they should be crispy). Drain well. Place in 9x13-inch baking pan.

Fry ground chuck or beef and onion (optional). Drain. Season with garlic salt or powder, to taste. Stir in Rotel. Slice Velveeta cheese over tater tots. Pour meat mixture over tater tots and cheese. Sprinkle all cheddar cheese over meat mixture and cover with foil.

Bake at 350°F for 30 to 45 minutes, or until cheese is melted. Serve with a salad on the side.
