TACO CASSEROLE | |
1 lb. ground beef 1 pkg. taco seasoning mix 3/4 c. water 1 (15 oz.) can refried beans 2 c. shredded lettuce 1/4 c. chopped onion 1 tbsp. chopped green chilies (opt.) 1 c. shredded cheddar cheese Tortilla chips Chopped tomato, sliced ripe olives, sour cream, taco sauce 1. Put meat into 2 quart glass casserole, cover with waxed paper. Cook in microwave oven 3 1/2 minutes on high or until meat is no longer pink; stir once. Drain fat. 2. Mix taco mix and water to meat; stir. Cover with a glass lid or plastic wrap. Cook in microwave 5 minutes at simmer; stir once. 3. Lightly grease bottom of a 2 quart baking dish. Spread refried beans evenly over the bottom. Sprinkle with lettuce, onion and chilies; top with meat mixture. Cover with waxed paper. 4. Cook in microwave 5 minutes at Bake, or until dish feels warm on bottom; rotate dish 1/2 turn once during cooking. Sprinkle cheese on top. Cook, uncovered 1 minute at Bake, or until cheese is melted. Garnish with tortilla chips. Serve with chopped tomato, olives, sour cream and taco sauce in separate serving dishes. |
