PESTO SAUCE 
2 c. lightly packed fresh basil leaves
3 tbsp. pine nuts (available in most grocery stores)
2 cloves garlic
1/2 c. Parmesan cheese (or Parmesan and romano)
1 c. olive oil

Place basil, pine nuts, garlic and cheese in the work bowl of a food processor and process until a near-puree is obtained. Pour oil slowly through the feed tube while the motor runs and scrap down the sides of the work bowl with a rubber spatula once or twice. Run 20 to 30 seconds longer. Remove and reserve.

Makes approximately 1/2 cup. This may be frozen. Can be served over pasta and used with seafood and chicken dishes.
