CORNBREAD MUFFINS 
1 c. all purpose flour
1/4 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1 c. yellow cornmeal
1 egg, well beaten
1 c. milk
5 tbsp. butter, melted

Preheat oven to 375 degrees. Mix together flour, sugar, baking powder and salt. Add cornmeal. Add to mixture: egg, milk and melted butter. Beat until smooth, but do not over mix. Bake in greased muffin pan at 375 degrees for 12 to 15 minutes or until lightly browned.
