PIMENTO CORNBREAD MUFFINS 
1 pkg. cornbread mix
1/2 c. chopped onion
1/2 c. chopped celery
1/2 c. chopped pimento
Pimento for garnish

Prepare cornbread according to package directions; add onion, celery and pimento. Put in muffin cups. Garnish with strips of pimento and bake in 425 degree oven for 20-25 minutes or until golden brown. Serve hot.
