PUMPKIN PECAN PIE 
2 slightly beaten eggs
1/4 c. sugar
1/4 c. firmly packed brown sugar
1 tsp. flour
1/2 tsp. cinnamon
1/4 tsp. salt
1/8 tsp. ginger
1/8 tsp. nutmeg
2/3 c. cooked pumpkin
2/3 c. evaporated milk

Pastry for one 9 inch pie. Bake at 425 degrees for 10 minutes. Then at 350 degrees for 15 minutes. Remove from oven. Pour Southern Pecan Topping on filling and sprinkle with 1/2 cup chopped pecans. Bake at 350 degrees for 25 to 35 minutes until knife inserted 1/2 way comes out clean.

SOUTHERN PECAN TOPPING:

2 eggs until foamy

1/2 cup dark corn syrup
1 tbsp. flour
2 tbsp. molasses
1 tsp. vanilla
1/2 tsp. salt

Mix well.
