PUMPKIN PECAN PIE 
3 eggs, slightly beaten
1 c. canned or cooked mashed pumpkin
1 c. sugar
1/2 c. dark corn syrup
1 tsp. vanilla extract
1/2 tsp. ground cinnamon
1/4 tsp. salt
1 unbaked 9" pie shell
1 c. chopped pecans
Whipping cream

Combine eggs, pumpkin, sugar, corn syrup, vanilla, cinnamon and salt. Mix well. Pour into pastry shell. Top with chopped pecans. Bake at 350 degrees for 40-60 minutes or until knife inserted comes out clean. Cool. To serve, top with whipped cream.
