QUICHE LORRAINE 
6 slices bacon (about 1/4 lb.)
3 eggs
1 c. half & half
1/4 c. chopped green onion
1 tbsp. all-purpose flour
1/2 tsp. salt
1/8 tsp. pepper
1/8 tsp. cayenne pepper
Baked Pie Shell
1 c. shredded Swiss cheese (about 4 oz.)

1. Place bacon on roasting rack; cover with paper toweling. Microwave at high (100%) until crisp, 5-6 minutes. Crumble and set aside.

2. Combine eggs, half & half, green onion, flour, salt, pepper and cayenne pepper in medium bowl. Beat with a wire whisk or electric mixer until well blended. Microwave at medium (50%) until thoroughly heated and slightly thickened, 4-6 minutes, stirring every 1-2 minutes.

3. Place crumbled bacon evenly in pastry shell. Sprinkle with cheese. Pour hot egg mixture over cheese. Place quiche on inverted saucer in oven. Microwave at medium (50%) until center is set but not dry, 16-25 minutes. If using oven other than Sharp Carousel, rotate quiche every 2-3 minutes. Let stand 5 minutes to complete cooking. Makes 4-6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
