CHICKEN AND RICE 
1 chicken, cut up
1/2 c. cooking oil
1 (10 1/2 oz.) chicken broth
1 tsp. salt
1/2 tsp. pepper
1 bell pepper, chopped
1 med. onion, chopped
1 clove garlic, mashed
1 can cream of mushroom soup
cornstarch
1 to 2 c. rice, cooked

Brown chicken in oil. Add chicken broth and soup. Stir well. Add all vegetables and seasonings. Simmer chicken and vegetables until done. Remove chicken and vegetables. Thicken broth with cornstarch mixed with cold water.

Place cooked rice on platter and make a bed with it. Add chicken and vegetables. Pour gravy over all.
