RHUBARB NUT LOAF 
1 1/2 c. brown sugar
2/3 c. oil
1 egg
1 c. buttermilk
1 tsp. baking powder
1 tsp. salt
1 tsp. vanilla
2 1/2 c. flour
1 1/2 c. fresh, diced rhubarb
1/2 c. chopped pecans
1 tbsp. butter, melted
1/3 c. sugar

Combine sugar and oil, beat in egg. Combine buttermilk, baking soda, salt and vanilla. Add to sugar mixture alternately with flour. Beat well after each addition. Fold in rhubarb and pecans.
