CHICKEN SURABAJA 
3 (3/4 lb. size) whole chicken breasts, boned and skinned

MARINADE:

1/4 c. soy sauce
2 tbsp. lemon juice
1 clove garlic, finely chopped
Dash of white pepper

SAUCE:

1/4 c. butter
1/2 c. soy sauce
2 tbsp. lemon juice
1/2 tsp. salt
Dash of cayenne
Canned French fried onion rings, optional

Cut chicken into 1 inch cubes. Place in shallow baking dish.

Make Marinade: Combine soy sauce, lemon juice, garlic, pepper and 1/4 cup water. Pour over chicken. Refrigerate 1 hour.

Thread chicken on 12 skewers. To cook outdoors: Prepare coals. Adjust grill 5 to 6 inches from coals. Grill chicken 12 to 15 minutes, turning frequently. To cook indoors: Broil chicken on rack in broiler pan, 6 inches from heat, 6 minutes on each side.

Meanwhile, make sauce: Combine all ingredients in medium saucepan. Bring to boiling; reduce heat and simmer 2 minutes. Serve chicken with sauce poured over. Garnish with onion rings if desired. Makes 4 servings.
